Beep Beep Day Recipe
Traffic light biscuits (Makes about 12 biscuits)
Ingredients
8oz butter/margarine
4oz caster sugar
8oz plain flour
4oz semolina
pinch of salt
blackcurrant jam
smarties (you need red, orange and green)
a little icing sugar
In advance, a grown up should:
Pre-heat oven to gas mark 4, 350°F
Brush baking sheet with oil
Cream the butter and the sugar together until light and fluffy.
Then the children should:
- Mix the flour, semolina and salt into the butter and sugar mixture, to form a soft dough.
- Roll out the dough into a rectangle.
- Cut the dough into 24 rectangles, about 10cm long by 4cm wide (or smaller if you want to make more biscuits).
- Take half of the rectangles (12) and cut three holes in them, for the traffic lights. You could use an icing piping tube as a cutter.
- A grown up then bakes all 24 rectangles for 10-15 minutes until lightly browned.
- Assemble your traffic lights! Spread the rectangles that you did NOT put holes in with a little blackcurrant jam. Sprinkle the ones you DID cut holes in with icing sugar. Then stick the ones with the holes on top of the ones without holes.
- Fill in the holes with the right coloured smarties! Red at the top, orange in the middle, and green at the bottom, sticking them into the jam so they stay in place.
ALTERNATIVE FILLING:
Strawberry jam for the top hole, then apricot, then lime jelly or greengage jam.
